yes, 'dan ni’n cyfrif wyth nos would be fine, but make sure there is a pause between wyth and nos, otherwise it could sound like “we count a week” (kind of the same - but different!)
But if you mean ‘we count’ as in, ‘we matter’ or ‘we are important’, I’m not sure if ‘mater’ is OK or if ‘pwysig’ would be better. Does ‘mater’ mean ‘pus’?

mater is the noun (matter) so wouldn’t work in that instance. You could still use cyfrif, or you could use bod yn bwysig as the verb ‘to count = to be important’, or bod o bwys (i rhywun) as the verb 'to matter (to someone).
mater can mean a matter, an issue, an affair (in the situation sense, not in the love-life sense!), but ‘pus’ is crawn (pus may be called matter in English, but not in Welsh!)
