Iā€™ve already learnt some Welsh, and am finding it difficult to think in terms of siarad es i rather than mi nes i siarad. Which is the most correct form?

There isnā€™t really a ā€œmost correctā€ form here and youā€™ll hear either depending on where you are in Wales and who is speaking. The first one is often written as ā€œsiaradais iā€, but is said ā€œsiarades iā€ and sometimes spelt that way. You could also say the second one without the ā€œmiā€, i.e. just ā€œnes i siaradā€ and youā€™ll hear that a lot.

Thanks, Iā€™m in NE Wales, but have in laws who are native Welsh speakers from Blaenau-Ffestiniog, so I hear all sorts of Welshā€¦ Tx
