I’ve already learnt some Welsh, and am finding it difficult to think in terms of siarad es i rather than mi nes i siarad. Which is the most correct form?

There isn’t really a “most correct” form here and you’ll hear either depending on where you are in Wales and who is speaking. The first one is often written as “siaradais i”, but is said “siarades i” and sometimes spelt that way. You could also say the second one without the “mi”, i.e. just “nes i siarad” and you’ll hear that a lot.
Thanks, I’m in NE Wales, but have in laws who are native Welsh speakers from Blaenau-Ffestiniog, so I hear all sorts of Welsh… Tx
